What can a starred cuisine that’s truly in phase with its times be when you are in one of the loveliest and oldest Parisian palaces? Amaury Bouhours and his team provide an answer to this question that is as personal as it is brilliant.

The tour de force first of all means that none of the fundamentals of French haute cuisine can be left by the wayside: all the precision of the cooking, all the subtlety of the jus are there. His years of experience gained in Alain Ducasse’s world offer Amaury the sound technical foundations he needs for his cooking. Likewise, none of the master’s precepts are forgotten regarding the produce: it all comes from the best growers and the menu quite legitimately pays glowing tribute
The menu
A menu with short designations, in line with the kitchen in the sense that the focus remains on the products themeselves. With the Collection menu, guests discover the essence of the restaurant le Meurice Alain Ducasse's cuisine, in a seven-stage journey.

In the wine cellar, the essential translates to a wine list imagined with for ambition to find the taste of terroir in the glass. The wine menu combines great French classics with the most beautiful discoveries of the moment, and maintains a delicious dialog with the kitchen of essential.

In Bordeaux as well as in Bourgogne, no great names in the French prestigious wines are missing. But the connoisseur will also enjoy being lead towards lesser known wines. The selection is also extended to wines from Europe, Switzerland and even Greece.
